To roast the tomatoes
Preheat oven to 400 and toss tomatoes in olive oil, salt & pepper. Place on a lined baking sheet (cut side up) and bake for 20 minutes
To make the sauce
Preheat skillet over medium-low. Add 1 tbs (ish) of olive oil, your garlic & shallots, & a pinch of salt & pepper. Stir frequently for 3-4 minutes.
Add in flour and whisk until combined. Add in Flaxmilk a little at a time, whisking in between to avoid clumps. Add nutritional yeast, lemon juice, parmesan cheese & more salt & pepper and bring to simmer for about 5 minutes. Sauce will thicken a bit!
Adjust seasonings if needed, toss in your cooked pasta and your roasted tomatoes and you are officially a master chef *chef's kiss*
