Spring Grain Bowl with Creamy Lemon Ginger Dressing
Spring in a bowl! 🌸 This grain bowl is loaded with nutrient-rich seasonal veggies and plant-based goodness 🌱. Topped with our favorite creamy lemon ginger dressing , it is sure to keep you glowing all day long! ☀️
1/3 cup Good Karma Classic Unsweetened FlaxmilkBuy It
¼ cup Olive Oil
¼ cup Lemon Juice
1 ½ tsp Soy Sauce or Tamari
½ tsp Fresh Ginger, grated
Agave or preferred sweetener, to taste
Salt and pepper, to taste
2 cups Cooked Quinoa or Grain of Choice
Mix of fresh and oven roasted seasonal vegetables. We used: radish, cucumber, sweet peas, asparagus, cauliflower, golden beets and a variety of microgreens and lettuce
Lemon Ginger Dressing
Combine all ingredients in a jar with a tight-fitting lid. Shake thoroughly until combined. Refrigerate until ready to use.
Prepare your bowl by cooking quinoa as directed, roasting vegetables on a sheet pan with olive oil, and cutting and dicing fresh vegetables and greens.
To assemble: add quinoa to a bowl, top with fresh and cooked vegetables, and drizzle with Lemon Ginger Dressing. Enjoy!
