Vegan Banana Pudding
No need for sugar-loaded packaged pudding mix—all you need is whole fruit, our Good KarmaPlantmilk, and a few simple pantry staples to whip up this creamy, deliciously nutritious treat. With our new shelf-stable UnsweetenedPlantmilk, you get to decide exactly how much natural sweetener to add, if any. Protein-packed and brimming with omega-3s, here’s a perfect nourishing after school snack the kids will go bananas for!
2 ripe bananas, additional to serve
2 cups Good Karma unsweetened or original Plantmilk, dividedBuy It
¼ Cup pure maple syrup
3 Tablespoons non-GMO cornstarch (or sub in arrowroot or tapioca)
pinch turmeric, optional for enhanced color
1 teaspoon vanilla extract
In a blender, combine bananas, 1 ¾ cups Good Karma plant milk, and maple syrup. Blend until smooth. Transfer to a saucepan over medium heat and cook, stirring regularly. Just as it is starting to bubble, reduce heat to low.
In a small bowl, whisk the remaining ¼ Cup milk with the cornstarch. Add to the banana mixtureand cook on low heat, whisking occasionally, until thick (5-10 minutes). Remove from heat and stir in vanilla.
Transfer to a bowl and let cool to room temperature or chill in the refrigerator. The pudding will continue to thicken slightly in the fridge.
Serve layered or topped with coconut whip and additions of choice such as vegan cookies, banana slices, chopped walnuts.
