Super Seed Cowgirl Cookies
Looking for a cookie that fuels the body as well as the soul? These cookies are vegan, flourless, sweetened only with fruit, high in protein, and made with entirely whole-food ingredients. They celebrate a very special small but mighty seed: flax! These Super Seed cookies use flax in three different ways: Good Karma flax milk, whole flax seeds, and flax meal. A riff on the classic Cowboy Cookie, this much more nourishing Cowgirl Cookie features dates, pecans, coconut,oats, and dark chocolate.
Ingredients
2 c pitted dates
½ - ¾ c Good Karma Unsweetened Vanilla Flax Milk
½ c natural, drippy almond butter
½ c superfine blanched almond flour
2 tbsp ground flax seed meal
2 tbsp whole flax seeds
1 tsp baking powder
¼ tsp salt
¼ c unsweetened shredded coconut
¼ c roasted pecans
¼ c whole oats
¼ c dark chocolate chips (choose dairy free if desired, or omit entirely to have a completely fruit-sweetened cookie)
Directions
Preheat the oven to 350° and cover a baking sheet with parchment paper or oil it well.
Give the dates a coarse chop to make sure there are no pits inside. It’s important to double-check, sinceso-called“pitted” dates often contain pit remnants.
Put the dates,½ c flax milk, almond butter,almond flour, flax meal, flax seeds, baking powder, and salt into a food processor.
Process just until the mixture begins to form a sticky ball and the dates are mostly broken down. If needed, add another dash of flax milk (the total moisture content of the dough will depend on the moisture of the dates you’re working with, which varies considerably). You want to achieve a thick, sticky dough that you can shape easily.
Add the mix-ins (coconut, pecans, oats, and chocolate chips) and pulse the food processor a few times, just until the mix-ins are incorporated.
Form the mixture into balls, each about 2 tbsp or slightly bigger than a golf ball,then press each ball into a cookie shape. The cookies won’t spread, so make them the shape/size you want now. This should give you about 8-10 cookies.
Bake at 350° forabout 20 minutes, until barely browned on the edges.
