Rainbow Fruit Kabobs with Dairy-Free Coconut Cream Dip
Nothing screams summertime quite like these Rainbow Fruit Kabobs with Dairy-Free Coconut Cream Dip!
7 orange slices, small segments
7 pineapple, pieces
7 kiwi slices
7 red grapes
7 wooden skewers
1 Can Coconut Cream, or full fat Coconut Milk (tip: refrigerate overnight for firmertexture)
1-3 Tablespoons Good Karma Vanilla Flaxmilk
DF Coconut Cream Dip
Coconut cream is the cream on the top of cold coconut milk, pour the remaining coconut water out leaving only the cream on top. Add the coconut cream to a bowl.
Mix with a standing of hand mixture until fluffy. Add 1-3 Tbsp of Good Karma Vanilla Flaxmilk gradually. Add additional sweetener like honey if desired (or use GK Vanilla).
Pour into a container and refrigerate for firmer texture. Serve in a bowl with rainbow fruit kabobs!
Take 7 wooden skewers and thread the following fruit on each: 1 strawberry (tops removed) , 1 orange segment, 1 pineapple chunk, 1 kiwi slice, 1 blueberry, 1 grape. Repeat until all skewers are completed.
