Nice Cream Sandwiches

Our Good Karma milks add an extra dash of wholesomeness to delectable plant-based cookies while letting you cut back on oil and sugar! Each variety in this cookie trio makes the perfect handhold for homemade “nice cream” sandwiches--hearty enough to handle the sweet, creamy filling, tender enough to wholly enjoy each bite after a quick firm-up in the freezer!
Ingredients
2 Cups flour
1 Teaspoon baking soda
Pinch sea salt
1/3 Cup coconut sugar
1/3 Cup granulated or monkfruit sugar

1/3 – ½Cup Good Karma Vanilla Plantmilk or Flaxmilk

¾ Cup dairy-free chocolate chips, mini chips, or chunks
1 ¼ Cups flour
½ Teaspoon baking soda
¼ Cup coconut sugar
½ Cup brown sugar or maple syrup
⅓ Cup cocoa powder
2 Tablespoons ground flaxseed mixed in 5 Tablespoons water
⅓ Cup Good Karma Plant Milk, chocolate or vanilla, more as needed
¼ Cup olive or other light-flavored oil
½ Cup dairy-free chocolate chips, optional
1 Cup oats
¾ all-purpose, white whole wheat, or gluten-free blend flour
½ Cup brown or coconut sugar
½ Teaspoon baking soda
½ Cup peanut butter
2 Tablespoons ground flaxseed mixed in 5 Tablespoons water
1 Teaspoon ground cinnamon
Pinch of salt
2 Tablespoons unsweetened applesauce
1/4 Cup Good Karma Plant Milk (plain or vanilla), more as needed)
Optional, peanut butter mini chips or other addends
4 cups sliced very ripe banana, frozen at least two hours (overnight+ is better)
¼ -⅓ Cup Good Karma milk of choice
2-3 ice cubes, optional

Homemade Banana Nice Cream
Directions
Prepare the cookies: In a large bowl, combine all dry ingredients (flour, sugar, baking soda). Add wet ingredients, stirring to form a thick batter. Start with 1/3 Cup Good Karma milk (1/4 for peanut butter oatmeal), and add additional milk by the tablespoon as needed.Stir in chocolate chips or other addends.
For sandwich cookies, drop approximately ¼ Cup batter per cookie onto a parchment or silpat-lined baking sheet, roughly 2-inches apart. Press down lightly with a fork or back of a spoon to flatten to about 1/8-inch. (For smaller cookies to enjoy by themselves, reduce to roughly 1-Tablespoon of batter each, with less room needed in between.)
Bake at 325 for approximately 12 minutes. Let cool fully, or place in freezer.
Prepare the sandwiches: Once cookies are baked and cooled, spread a layer of nice cream on the flat side of a cookie. Add a second cookie on top, pressing to seal together as a sandwich. Repeat until you have the desired number of sandwiches. Enjoy immediately, or wrap each sandwich securely in plastic wrap and freeze until solid, approximately 2-3 hours.
Banana Nice Cream
Add bananas, any addends of choice, and ⅓ Cup Good Karma milk to a high speed blender. Blend on high for 1-2 minutes, pausing to scrape the sides as needed. Add additional milk approximately 1-2 Tablespoons at a time to assist with blending until reaching a thick, creamy texture. Enjoy as is, or transfer to a loaf tin and place in the freezer to firm up, 1-2 hours. Enjoy!
