Mason Jar Asian Chopped Salad with Creamy Good Karma Avocado Dressing

Power through the afternoon with a delicious and nutritious Mason jar salad. Batch prepped in advance and stored in the fridge, they're ready to go when you are! Not only are they gorgeous, but they are full of plant-powered protein to keep you full and satisfied.

Ingredients

    Salad

  • Edamame

  • Cucumber, peeled and chopped

  • Mango, chopped

  • Quinoa, cooked and cooled

  • Red Pepper, diced

  • Red Cabbage, chopped

  • Green Lettuce, chopped


  • Blender Creamy Avocado Dressing

  • 1 lg Avocado

  • 1 lime, juiced

  • ½ C cilantro

  • 1 tsp soy sauce

  • 1/3 C Good Karma Unsweetened Flaxmilk + Protein

Directions

  1. Layer- dressing first, then edamame, cucumber, mango cooked quinoa, red pepper, red cabbage and green lettuce. Shake! To distribute the dressing. Eat! Yum!
