Cinnamon Roll Overnight Oats

Cinnamon Roll Overnight Oats! Is it breakfast? Is it dessert? It doesn't matter, it's delicious and nutritious! Make several at a time so you can have a healthy breakfast waiting for you in the morning all week long.

Ingredients

    Overnight Oats

  • 2 C Rolled Old Fashioned Oats

  • 2 C Good Karma Vanilla Flaxmilk

    Vanilla Flaxmilk Buy It
  • ¾ C Vegan Yogurt of choice *optional, adds creaminess

  • 4 tsp Chia Seeds

  • pinch of Sea Salt


  • Cinnamon Date Caramel

  • 8 Dates, soaked

  • 3 Tbsp coconut sugar, or brown sugar

  • 1 tsp vanilla

  • 1 tsp cinnamon

  • 4 Tbsp Maple Syrup

  • 1/2 C Good Karma Vanilla Flaxmilk


  • For Cream Cheese Icing

  • 4 Tbsp Vegan Cream Cheese

  • 4 tsp powdered sugar

  • 1 tsp Good Karma Vanilla Flaxmilk

  • ½ tsp vanilla

Directions

Oats

  1. Place all ingredients in a bowl and stir until combined. Then transfer to a container with a lid. Cover and place in the refrigerator for at least 2 hrs or overnight.

Cinnamon Date Caramel

  1. Place all ingredients in a blender, blend until smooth. Add more flaxmilk to reach desired thickness. Store in the refrigerator until ready to use.

Cream Cheese Icing

  1. Place all ingredients in a bowl and whisk with a fork until smooth, no lumps remain.

Make your Cinnamon Roll Overnight Oats

  1. In a jar layer Cinnamon Date Caramel, then oat mixture and top with icing. Sprinkle with cinnamon and sugar to decorate or use extra caramel to create a swirl on top! These can be stored in the refrigerator for up to 4 days. Enjoy!
