Apple Pie Baked Oatmeal Cups

Ingredients

1 ½ cups Good Karma Plantmilk
Buy It 2 eggs
1 teaspoon vanilla
2 cups gluten-free quick-cook oats
2 tablespoons honey
1 teaspoon baking soda
1 teaspoon cinnamon
¼ teaspoon clove
¼ teaspoon allspice
Pinch salt
1 cup diced apple
Directions
Preheat oven to 350 degrees. Line a muffin tin with liners or spray well. In a mixing bowl, whisk together the eggs, Plantmilk milk, and vanilla. Add the quick-cook oats, honey, cinnamon, clove, allspice, and salt. Stir well.
Fold in the diced apple chunks. Fill 12 muffin cavities with batter. Bake for 15-18 minutes or until golden brown on the edges. Remove from the oven, let cool for 10 minutes before serving.
