Apple Pie Baked Oatmeal Cups

Ingredients

  • 1 ½ cups Good Karma Plantmilk

  • 2 eggs

  • 1 teaspoon vanilla

  • 2 cups gluten-free quick-cook oats

  • 2 tablespoons honey

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • ¼ teaspoon clove

  • ¼ teaspoon allspice

  • Pinch salt

  • 1 cup diced apple

Directions

  1. Preheat oven to 350 degrees. Line a muffin tin with liners or spray well. In a mixing bowl, whisk together the eggs, Plantmilk milk, and vanilla. Add the quick-cook oats, honey, cinnamon, clove, allspice, and salt. Stir well.

  2. Fold in the diced apple chunks. Fill 12 muffin cavities with batter. Bake for 15-18 minutes or until golden brown on the edges. Remove from the oven, let cool for 10 minutes before serving.
