Preheat the oven to 350. Grease a 9x5 inch loaf pan with nonstick cooking spray, or butter. Line with parchment if desired
In a medium bowl, whisk together dry ingredients: flour, baking soda, baking powder, and salt until combined.
In a separate bowl, mix all wet ingredients until combined. Gradually add the dry ingredients to the wet ingredients, one cup at a time. Stir until just combined. Do not overmix
Divide the batter into two bowls. In one, add the cocoa powder and 3 Tbsp boiling water.
Spoon the plain batter and chocolate batter alternately into your loaf pan. Swirl with a knife. Top with vegan chocolate chips if desired
Bake for 1hr or until a toothpick comes out clean
Let it cool 10 min before removing the loaf from the pan or cutting into it. Slice and enjoy!
