Vegan Lemon Raspberry Muffins
These light and fluffy Vegan Lemon Raspberry Muffins are sweet and tart and make a delcious breakfast treat or snack! The fresh raspberries and bright lemon flavor are sure to bring some sunshine to your day!
1 ¼ C Good Karma Unsweetened Flaxmilk + ProteinBuy It
1 teaspoon apple cider vinegar
2 C all purpose flour
1 C granulated sugar
1 TBSP cornstarch
2 tsp baking powder
1/3 C coconut oil, or canola oil
½ tsp vanilla extract
Zest of 1 lemon, 1 tsp lemon extract (optional)
1 ½ C fresh raspberries, cut large raspberries into smaller pieces *can use frozen berries
Topping: coarse sugar
Preheat the oven to 350 degrees. In a large mixing bowl combine dry ingredients: flour, sugar, baking powder, salt and corn starch. Whisk until combined.
