Vegan Lemon Raspberry Muffins

These light and fluffy Vegan Lemon Raspberry Muffins are sweet and tart and make a delcious breakfast treat or snack! The fresh raspberries and bright lemon flavor are sure to bring some sunshine to your day!


  • 1 ¼ C Good Karma Unsweetened Flaxmilk + Protein

  • 1 teaspoon apple cider vinegar

  • 2 C all purpose flour

  • 1 C granulated sugar

  • 1 TBSP cornstarch

  • 2 tsp baking powder

  • 1/3 C coconut oil, or canola oil

  • ½ tsp vanilla extract

  • Zest of 1 lemon, 1 tsp lemon extract (optional)

  • 1 ½ C fresh raspberries, cut large raspberries into smaller pieces *can use frozen berries

  • Topping: coarse sugar


  1. Preheat the oven to 350 degrees. In a large mixing bowl combine dry ingredients: flour, sugar, baking powder, salt and corn starch. Whisk until combined. In a separate medium bowl add Good Karma Unsweetened Flaxmilk + Protein and apple cider vinegar creating vegan “buttermilk”, set aside for 5 min. Next add oil, lemon zest, lemon and vanilla extr
