Vegan, Gluten Free Summer Cobbler

  1. 1 1/2 cups coconut sugar
  2. 1 cup gluten free flour (we used Living Now)
  3. 1 teaspoon of baking powder
  4. 1 teaspoon of baking soda
  5. 1 cup Good Karma Unsweetened Flaxmilk
  6. ½ cup of melted coconut oil
  7. 2 cups of sliced peaches
  8. ½ cup blackberries
  1. Preheat your oven to 350 degrees. Grease a 9-inch pie dish with a little bit of coconut oil and set aside. Mix your dry ingredients, including the gluten free flour, 1 cup of coconut sugar, baking powder and baking soda. Slowly stir in the flaxmilk and coconut oil until fully blended and set aside. In another bowl, mix your fruit together with the remaining ½ cup of sugar. Place this fruit mixture into your pie dish and pour your batter over the fruit. Bake for 50 minutes or until the top is golden brown.
