Vegan Mac and "Cheese"

  1. 1 cup of cut carrots
  2. ½ white onion
  3. 1 cup of Good Karma Unsweetened Flaxmilk
  4. ¾ cups of cashews
  5. ½ cup of nutritional yeast
  6. juice from half a lemon
  7. 1 tablespoon of garlic powder
  8. 1 teaspoon of paprika
  9. salt and pepper to taste
  10. 1 box of gluten free noodles, prepared according to the box directions
  1. Boil carrots and onion until soft.
  2. Remove from water and put in a food processor.
  3. Add the flaxmilk, cashews, garlic powder, paprika, lemon juice and nutritional yeast and blend until smooth. Add salt to taste.
  4. Cook the gluten free noodles, drain and add back to the pot on the stove.
  5. On low heat, stir in your desired amount of cheese sauce and top with black pepper.
  6. Serve and enjoy!
