Cupcakes
  1. 1 cup Unsweetened Flaxmilk + 1 tsp apple cider vinegar
  2. 1 stick vegan butter, softened
  3. 1 cup granulated sugar
  4. 1 tsp vanilla extract
  5. 1 1/2 cups unbleached all-purpose flour
  6. 1 1/2 tsp baking powder
  7. 1/2 tsp baking soda
  8. 1/4 tsp salt
  9. 1/3 cup vegan sprinkles (color of choice)
Frosting
  1. 1 stick vegan butter, softened
  2. 3 cups powdered sugar
  3. 1/4 tsp vanilla extract
  4. 1-3 tbsp Flaxmilk
  5. Bag of vegan white chocolate chips
Instructions
  1. Preheat oven to 350 degrees F. Grease and flour a 8x8 cake pan.
  2. In a separate bowl, measure out Good Karma Unsweetened Flaxmilk and vinegar.
  3. Add softened butter and sugar to a large mixing bowl. Beat on medium speed until fluffy. Add vanilla and mix until combined.
  4. Whisk dry ingredients (excluding sprinkles) in a separate bowl and until smooth.
  5. Combine all ingredients with butter/sugar, alternating wet and dry mixtures and ending with the dry mixture. Blend on low until smooth.
  6. Stir in sprinkles with a rubber spatula or mixing spoon.
  7. Pour batter into prepared pan and bake for 30-35 min, or until a toothpick inserted into the center comes out clean. Set aside and let cake cool completely.
  8. In a different mixing bowl, beat softened butter on medium speed until light and fluffy. Add powdered sugar (1/2 cup at a time) and continue mixing until combined. Stir in vanilla. Slowly stream in Unsweetened Flaxmilk until desired consistency is reached. Turn mixer to high for 2-3 min.
  9. Crumble completely cooled (seriously, completely cooled) cake into a large mixing bowl. One spoonful at a time, add frosting to the crumbled cake and combine with hands. Stop when the mixture holds together but is not gooey.
  10. To assemble cake pops, shape the cake/frosting mixture into walnut sized balls. Insert lollipop sticks into the bottom and place on a wax paper lined baking sheet. Let harden in the freezer for 15 min.
  11. While cake pops are setting, melt the vegan white chocolate on the top of a double boiler over medium heat. Dip cake pops into the chocolate, stirring around until completely covered. Shake off excess chocolate. Roll wet cake pop into the sprinkles and place upright to harden.
