Ingredients
  1. For the Filling
  2. 3 cans of sweet potatoes
  3. ¼ cup of gluten free flour
  4. ½ cup of sugar
  5. 1 tablespoon of pumpkin pie spice
  6. 1 teaspoon of vanilla
  7. 2 cups of gluten free oats
  8. ½ cup of Good Karma Unsweetened Flaxmilk + Protein
  9. 4 tablespoons of coconut oil or vegan butter, melted
  10. For the Topping
  11. ¼ cup of gluten free flour
  12. ½ cup of sugar
  13. 3 tablespoons of coconut oil or vegan butter, melted
  14. 2 teaspoons of cinnamon
  15. ¼ cup of coconut shreds
  16. ½ cup of pecans, smashed
Instructions
  1. Preheat the oven to 350 degrees F. Grease a 9-inch pie dish with your choice of oil.
  2. In a medium bowl, mix all your filling ingredients and pour mixture into the greased pie dish. Set aside.
  3. In another bowl mix all your topping ingredients and spoon on top of the sweet potato mixture.
  4. Bake in oven for 25-30 minutes and serve immediately!
